  • 1 9x13 baking dish

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 cup long grain white rice
  • 2 cups shredded cheddar cheese
  • 1 small onion chopped
  • 1 medium bell pepper chopped (any color)
  • 1 8 oz can tomato sauce
  • 2 tsp garlic powder
  • 2 cups beef broth
  • 1 tsp paprika
  • 1 tbsp Italian seasoning

Instructions
 

  • Preheat your oven to 375°F and grease a 9x13 baking dish.
  • In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess grease.
  • Add the chopped onion and bell pepper to the skillet. Cook for about 5 minutes until softened.
  • Stir in the garlic powder, paprika, and Italian seasoning. Add the rice, beef broth, and tomato sauce. Mix well.
  • Bring the mixture to a boil. Once boiling, reduce heat to medium-low, cover, and let simmer for 20 minutes or until the rice is fully cooked and most of the liquid is absorbed.
  • Stir in 1 cup of shredded cheddar cheese until melted and well combined.
  • Transfer the mixture to the greased 9x13 baking dish. Sprinkle the remaining 1 cup of cheese evenly on top. Bake for 15 minutes or until the cheese is melted and golden brown.
  • Let the dish sit for about 5 minutes before serving. Enjoy!
